Pickled purple cabbage is absolutely delicious on some shrimp or fish tacos. You can even add it to your chicken or beef tacos and fajitas. It brings such a great tangy crunch to the table and has that perfect acidity and sweetness which is great to balance with a spicy dish.
Not only is it delicious, it’s really pretty too! Beautiful deep purple cabbage turns into a bright purple as it pickles which brings a great pop to your taco or whatever dish your adding it to.
Along with a great crunch, it can bring a sweetness to your dish as well. I like to add a bit of honey into our brine along with sugar and salt. You can certainly tailor the sweetness to your liking, don’t add honey or cut back the sugar.
A sweet flavor can be very complimentary when eating a spicy shrimp taco. Which is why this pickled purple cabbage goes perfectly with my spicy shrimp tacos.
I even like to eat it with spicy chicken tacos. We are a fan of Torchy’s Tacos and they have a delicious super spicy Jerk Taco called Brushfire. I always loved the pickled cabbage on it along with their shrimp taco.
After making this pickled purple cabbage at home, we have taken our tacos to the next level. I’m not sure I will be able to make tacos and fajitas without it now, it is that yummy.
I loved having the kids help make this too! The cabbage turns the water all blue when pouring the hot water over it and the kids thought it was really neat (OK, I did too).
The best part of this recipe is, the longer it sits, the better the flavor gets. This pickled purple cabbage can be ready to eat in 30 minutes after you refrigerate it. But if you want maximum flavor, make it the morning or day before you want to use it on your tacos.
You can use a mason jar container or Tupperware for this recipe. As long as all the cabbage is eventually submerged in the brine it will be OK and you can keep this in the fridge for up to one week.

Quick Pickled Purple Cabbage
Get ready to take your tacos to the next level. This pickled purple cabbage adds the perfect sweet and tangy crunch to any shrimp or fish tacos. Taco Tuesday has never looks so good!
- 1 cup shredded purple cabbage
- 3/4 cup white vinegar
- 1/2 tsp salt
- 1 tsp white sugar
- 1 tsp honey
Add water to a small pot and start to boil.
Add all ingredients but cabbage into a mason jar or Tupperware and stir until sugar and honey has dissolved.
Add shredded cabbage to a mesh strainer.
Once water has started to boil pour slowly over cabbage while holding the strainer over the sink. You can strain water into a bowl if you want the kids to watch it turn blue.
Add cabbage to the brine mixture and seal container. If you have a lot of cabbage above the liquid you can add more vinegar as needed.
Seal container and set in fridge for at least 30 minutes before serving. Best the next day. Will keep for up to a week.
