If you are looking for a simple recipe that has a ton of flavor then these Grilled Pesto Chicken K-Bobs are here to save the day. Freshly chopped veggies and chicken are marinated in yummy Pesto and then stuck on K-Bobs and grilled to perfection.
This recipe is so simple to put together and can be tailored to your own taste. If you are trying to save time (or are feeling lazy) you can find some pre-skewered veggies or pre-chopped veggies and use those instead of chopping your own.
I like to eat our Pesto K-Bobs fresh off the grill with a yummy risotto and steamed Broccoli. We also like making these K-Bobs because they make great leftovers! Add any leftover chicken and veggies to a pasta or salad for a simple lunch or yummy dinner.
I am a huge fan of Sprouts produce and meats, so I get all our produce and meat from there or Aldi. My favorite pesto to buy is Sprouts fresh made pesto. It is the closest to the homemade stuff I make so it is our family’s fave. You can use your favorite pesto or make your own for this recipe.
If you shop at Sprouts then you know they have HUGE chicken Breasts. For this recipe I used two chicken breast and cubed it up myself. This gave us a good amount for leftovers which is what I made this for too!
You can also tailor the veggies to your own liking. We used our favorite veggies which are red bell pepper, purple onion, mushrooms, and Italian Squash. You could also add potatoes, yellow squash, green peppers, whatever your faves are, go for it!
This meal was also a hit with the kiddos. My kids totally prefer grilled chicken whether it is BBQ, regular, or Pesto. My kids eat all of their chicken when it is grilled and I do not blame them, I love the flavor the grill gives chicken (or any meat really).
It just makes this Mama happy when a dinner plate is cleaned, ya know what I mean 😉
You can marinade the chicken and veggies overnight or for about 30 minutes. If you really are a fan of pesto brush more on about 5 minutes before removing from the grill to give it a more pesto-y taste.

Grilled Pesto K-Bobs
- 1 ½ - 2 lbs. Chicken
- 1 Purple Onion
- 1 Red Bell Pepper
- 1 Large Italian Squash
- 1 Package of Mushrooms we like Bellas
- 1 Package of Pesto or make your own
Cube chicken and veggies into about 1 - 1 ½ inch pieces and put into a large bowl.
Pour Pesto into bowl with veggies and chicken, reserving some for brushing at the end if prefer. Mix pesto, chicken and veggies until pesto is coating everything.
Cover and store in fridge overnight or for 30 minutes.
Heat grill. Alternating between chicken and veggies, skewer until all the chicken and veggies have been used.
Once grill is heated, cook until chicken is cooked all the way through and juices run clear (165 degrees).
Serve over rice or with your favorite side dish. Enjoy.
