I love storing quick go to meals and snacks in the freezer. Sometimes the evening gets away from us and next thing you know it’s dinner time and you forgot to thaw out the chicken.
My fall back when this happens is breakfast for dinner usually. Or, I dig through the freezer to see what I have that can be made in 30 minutes or less. Bagel bites have become popular with the kids and they are a little pricey so I was not buying them all the time.
I am sure you are thinking they are not that much, which is true but when you have four people eating them once a week it IS pricey. I did the math the other day on the amount of money we spend just on frozen waffles and I was shocked!
My new mission is to make our own food as much as possible instead of paying another company to do it. Don’t get me wrong we LOVE Eggo waffles and Bagel Bites for a quick snack or breakfast but my wallet does not, so why not try to make my own version.
I came across these little mini bagels at Aldi and I thought, those would be great for homemade pizza bagels. Then I decided I was going to make my own and freeze them just like the ones we buy at the store.
When you make your own you get to decide what kind of sauce to use and how much cheese (there is never enough cheese on those bagel bites) and what kind of toppings to add. Plus the satisfaction of making your own food is just something else, at least for me.
Homemade Bagel Bites – Freeze for an easy after school snack or quick dinner on a busy weeknight
You can find mini bagels at any grocery store in the bread aisle usually and they are not very expensive. Grab your favorite pizza sauce and some mozzarella cheese plus whatever pizza toppings you plan on using.
We used pepperoni and I made some just plain cheese because Harper prefers cheese only. I bought already sliced pepperoni but I wanted the little chunks so I just cut them up more to make the smaller pieces.
First, half the mini bagels and place them top side down on a baking sheet lined with parchment paper. If you plan to freeze for another time then make sure the baking sheet you are using will fit in the freezer.
Apply desired amount of sauce to each bagel and then add your cheese and pizza toppings. I also like to add garlic salt and Italian seasoning to our pizza. Freeze for a few hours and place in a Ziploc bag and store in freezer.
When you are ready for some pizza bagels, preheat the oven to 425 degrees and place desired amount of pizza bagels on a baking sheet and bake for about 1o-15 minutes (cooking times depend on the oven). They are ready when cheese is bubbling and turning a little brown.
Serve as a snack or along side a salad or veggies for an easy dinner. If you make these homemade mini pizza bagels don’t forget to tag me at #moerecipes so I can see your creations! Enjoy!
