My mother in law told me about this Doritos taco salad she used to make my husband and his brother. I have always heard about the famous salad but never tried it until recently.
After talking to my mother in law about what all she added to hers and browsing other recipes, I decided it was time to give it a try. I am a huge taco fan and I have always loved a good taco salad as well so I was excited to try this famous salad.
I never thought to add Doritos to a taco salad though, apparently I had been missing out! The cheesiness of the Doritos along with the sweet Catalina salad dressing makes this salad SO GOOD.
It has definitely been added to the dinner menu rotation in our house and it was kid approved! I mean it has Doritos in it, how can it not be kid approved.
This salad can be made on a busy weeknight (do we dare say Tuesday) and makes great leftovers as well. Have your kids help and let them add the toppings to the salad. They will also love crushing up the Doritos in the bag too!
This recipe is pretty simple to throw together and will have your family asking for seconds. Serve with some fresh salsa or homemade guacamole and blend up some margaritas because this dinner is worth celebrating!
Loaded Doritos Taco Salad Recipe
Heat a large skillet with a lid to medium high heat. Brown beef and drain all the fat. Add in taco seasoning packet or make your own if you prefer and simmer for a few minutes adding water if needed.
Meanwhile chop your lettuce then drain and rinse black beans and corn. Add lettuce to a bowl and start loading up all your favorite taco toppings. We added sweet corn, black beans, diced tomatoes, shredded cheese, and black olives.
Crush up Doritos by putting them in a plastic baggie and smashing with a cup or rolling pin (kids hands will work too). Top salad with cooked taco meat, add salad dressing then mix well. Mix in Doritos last so they are nice and crunchy.
I also like to add avocado, salsa, and a little dollop of sour cream, it truly tastes like a taco in a bowl! All the flavors combined with the sweet dressing and and cheesy Doritos just make a great combination for this salad. Not to mention the greens and veggies you are getting your kids to eat. 🙂
If you don’t like some of the toppings I use here just tweak this recipe to your liking. Add your family’s favorite taco toppings or keep it simple. Set everything aside and make a taco salad bar (light bulb) and have everyone build their own.
