This chicken recipe is truly melt in your mouth good! It is a great quick and easy dinner that can be thrown together in a few minutes and pop in the oven. In fact I am betting you have all the ingredients in your kitchen.
This recipe is an oldie but a goodie in this house. I stopped making it for a while and just recently picked back up thinking it would be like by Harper. And I was right!
Both kiddos love this dish, I should also add we usually share as Nic is only 17 months and Harper is 5! One day I will make 6-8 of these at Dinner time.
This recipe is widely known across Pinterest as “melt in your mouth chicken” and everyone pretty much makes it the same way, give or take a few things. I think everyone’s mama or grandma grew up making this chicken because it is so easy and cheap.
One of the good things about this recipe is you can swap the mayonnaise for Greek yogurt which I have tried and it was still just as yummy. I have also seen this recipe used with sour cream.
I was thinking of mixing sour cream and mayo together but have not given it a try. Maybe even add in another kind of cheese if your feeling cheesy.
Easy Melt in Your Mouth Chicken Recipe – A Family Favorite
Start out with 4 chicken breast, this recipe is very good to half if needed, depending if you want leftovers or how many you are cooking for. I just cooked two good size breast this go round but often do 4 when I want leftovers.
If your chicken breast are thick lay them on a cutting board, cover with plastic wrap and beat with a mallet until thin, a little over one inch is good. Lay on a baking sheet lined with foil or a baking dish like I did here.

Mix mayo, garlic powder, salt, pepper and Parmesan cheese in a bowl until well combined. Spread mixture on top of chicken breast. Top with more cheese or seasonings if desired.
Bake for 30-45 minutes, until chicken is cooked through and juices run clear. If you would like more brown spots on chicken turn broiler on for 2-4 minutes, just watch it carefully.
Enjoy over rice or with mashed potatoes or some steamed Broccoli.
Baked Melt in Your Mouth Chicken
- 4 chicken breast
- 1 cup of mayonnaise
- 1/2 cup Parmesan cheese
- 1 teaspoon garlic powder
- salt and pepper
Preheat oven to 375 degrees. If chicken is thick beat with a meat mallet until about 1 inch thick.
Line baking sheet with foil and spray with non stick cooking spray, a baking dish will work as well. Season chicken with salt and pepper on each side.
Mix the mayonnaise, Parmesan cheese and garlic powder in a bowl until well combined. Spread evenly over all four chicken breast.
Bake chicken for 30-45 minutes, until juices run clear. Broil at the end for 2-4 minutes or until you get all those yummy brown spots on top of the chicken.
