I remember waking up on the weekends when I was younger to the smell of my Dad making Breakfast. There is nothing better than waking up to the smell of bacon or sausage cooking.
I would get so excited to see what it was he was cooking up for Breakfast. One of my absolute favorite things he used to make for Breakfast were his breakfast taquitos or breakfast burritos as most people call them.
I have been making my own version for years now and even though they do not taste exactly like my Dad’s they are pretty close and are very tasty!
These are great to make on Saturday or Sunday morning so you can eat them throughout the week. They make a super easy grab and go breakfast. Just pop them in the microwave for 30-45 seconds and enjoy.
I used to eat these on the way to work. Totally guilty of eating in the car. I am pretty sure that is where 90% of my breakfast was consumed when I worked full time.
Since Eric and me are the only ones that eat these I usually cut the recipe in half and it makes at least a dozen taquitos. If you plan on making extra to freeze or have bigger kids (Harper doesn’t know what she is missing, picky eater) that will eat them, then make the entire recipe.
The entire recipe below can make at least two dozen taquitos depending on the size of tortillas you use and how full you stuff them.
For this recipe a large skillet works best. My favorite sausage to use is Jimmy Deans Hot Sausage. It makes great flavor without having to add any seasonings and it is not overwhelmingly spicy at all.
Heat your skillet to medium high heat. While skillet is heating up crack a dozen eggs in a bowl and whisk.
Once skillet is heated add sausage and crumble with wooden spoon while cooking. Once sausage is all browned and cooked through, drain grease from pan. Set aside on a paper plate lined with a paper towel to soak up the rest of the grease.
Turn heat down to medium and wipe out the same pan you browned the sausage in with a paper towel and let it heat back up a bit.
Spray pan with non stick cooking spray and pour in the whisked eggs. Let cook while stirring with wooden spoon for a few minutes.
When you see the eggs start to cook add the sausage back in (before eggs are cooked all the way like the picture below). *I truly believe this step is what makes them so good*
Keep stirring eggs and sausage until eggs are all the way cooked or cooked to your liking. We like to cook them a little soft so not well done.
Warm tortillas in a skillet or in the microwave. Pour desired amount into tortilla, fold ends and then roll up. I love to eat mine with fresh salsa!
We usually roll up what we are going to eat so we can enjoy everything while it is nice and hot. Then roll the rest up after we are done eating and store in the fridge for a quick grab and go breakfast throughout the week.
Eric likes his to have cheese in them but I prefer mine without. As with most my recipes you can easily alter this to your taste. You can use regular sausage, or maple sausage – mmmm may have to try that. Cheese no cheese add in salsa, be creative and use your favorite ingredients.
3 Ingredient Breakfast Burritos (Dad's Breakfast Taquitos)
- 1 pound of hot sausage or your choice of flavor sausage Hot packs good flavor for this recipe
- Dozen whisked eggs
- Package of 24 flour tortillas
Heat a large skillet over medium high heat. While skillet heats up crack a dozen eggs into a bowl and whisk.
Once skillet is heated add all of the sausage and break up with a wooden spoon. Cook until nice and brown. Drain grease and set aside on a plate covered with a paper towel to soak up more of the grease.
Wipe out the skillet with a paper towel and heat back up for a few minutes on medium heat spray with cooking spray and then add eggs. Cook for a few minutes until eggs are cooking slightly then add in all of the sausage. Mix well and continue cooking and stirring, until eggs are cooked.
Enjoy rolled up in flour tortillas or as a breakfast taco in a corn tortilla. Serve with fresh salsa or hot sauce.
