We LOVE Chinese food in this house, who am I kidding we love FOOD in this house. Usually I just whip up a chicken fried rice but I needed to use some broccoli before it went bad.
I had gotten a ton of Broccoli in one of our Bountiful Baskets awhile back so I was trying to come up with something to make with what we had on hand.
I did not have any beef and I really wanted the Broccoli in a sauce so I decided to make Chicken and Broccoli instead of Beef and Broccoli. It turned out amazing and was a winner with Harper (she is 5 so anything she eats is worth noting).

I changed up a few things by adding a few extra spices and I loved how the flavor turned out. I had some extra stir fry veggies on hand so I added those too. I love a good stir fry loaded with vegetables!
Remember when slicing the chicken you do thin strips not chunks. Another good thing about this recipe is, because you slice the chicken strips so thin it cooks super fast. Making this dinner about 30 minutes to make and who doesn’t love a quick dinner (and it’s done in one pan – double bonus).
I also truly believe the chicken broth you use for this recipe is what makes it taste so good too. I am a fan of Knorr seasonings now because it means I never have to keep broth on hand.
I honestly never used all the chicken broth I ever bought from the store whether it be canned or in a box. With recipes only needing a cup or two I always had some leftover.
I would forget to freeze the leftovers thinking I would use it again in a few days but then never going back. Then I switched to bouillon cubes and I would always forget to throw them in water to dissolve.
So when I cam across Knorr seasonings and tried it in my Mexican rice (we use the chicken tomato one for Mexican rice) because a friend suggested it, I was hooked. Click on the above pic or here to get the three pack and add more flavor to your recipes!
It made such a difference in flavor so I bought chicken flavor too and have been using it when recipes call for chicken broth ever since.
Chicken and Broccoli Stir-Fry Recipe
- 2 large chicken Breast sliced into thin strips
- 3 cups of Broccoli
- 1/2 cup chicken broth 1/2 teaspoon Knorr chicken bouillon flavoring mixed with 1/2 cup of water
- 2 tablespoons corn starch
- 4 cloves of minced garlic
- 1 tablespoon oil
For the Sauce:
- 1/2 cup low sodium soy sauce
- 1/4 cup brown sugar
- 1/4 teaspoon ginger
- 2 teaspoons corn starch
Toss sliced chicken in a large bowl with the 2 tablespoons of corn starch. Heat oil in a large pan over medium heat for a few minutes. Add chicken to pan and cook until browned and cooked through. Set aside on a plate.
Throw minced garlic and broccoli into pan and stir. Add chicken broth to pan, then cover and simmer on low for about 10 minutes, or until broccoli is tender. Stir occasionally.
While Broccoli is cooking combine all the ingredients for the sauce in a bowl and mix well. Add cooked chicken and sauce to pan with broccoli and stir until sauce coats chicken and broccoli.
Let simmer a few more minutes until sauce begins to thicken then remove from heat.
