Looking for a super simple no hassle appetizer! These Bruschetta bites are full of flavor and super easy to throw together. With just a few ingredients you can make them in no time.
This recipe is perfect for a holiday party (Christmas favorite because of the colors) or a great addition to your pasta night.
We have been making these Bruschetta Bites for years now and they are a favorite around here. My five year old even loves them!
For this recipe you will need fresh basil, roma tomatoes, crumbled feta cheese, salt/pepper, olive oil and french bread.
We buy the long skinny baguette loaf for this recipe. It makes the perfect bite size slices to top your Bruschetta on.
Wash your basil and set on a paper towel and blot dry. Slice the bread into 1/2 inch slices and arrange on a baking sheet (line with foil for easy clean up).
Drizzle slices with olive oil and sprinkle with salt pepper and garlic powder or salt.
Bake bread slices in 375 degree preheated oven until a little crispy about 5-7 minutes. This step can also be done to your liking.
I like to get the bread crispy in the middle but not browned just yet. This will keep your bread from getting soggy from the Bruschetta mixture.
Dice tomatoes and Basil and throw in a bowl and mix to combine. Add salt and pepper and a little garlic salt if desired. Add in feta cheese and mix until all well combined.
Remove bread from oven and cool for 5 minutes. Move bread slices to serving dish. This next part can be done two ways.
You want to consider how fast they will be eaten or if you want them to be all pretty with the Bruschetta on top of each slice of bread.One thing that I have learned is, they will get all soggy from sitting throughout the party, if you have any leftover that is.
The other option is you can arrange your bread slices on a serving tray and have the Bruschetta mix in a nice bowl with a spoon for your guests to put them together as they eat.
They usually get eaten pretty fast around here so I put them all together right before people start arriving or when my first guest arrives.
The Bruschetta mix is fine to store in the fridge for easy prep ahead. You can also pre-toast your bread if you have the time. That way all you have to do before the guest arrive is throw them together.
I have also experimented with different cheeses. Do not be afraid to make this recipe to your liking. If you do not like feta cheese try goat cheese, or try some Parmesan or whatever cheese is your favorite. Experiment!
Bruschetta Bites Appetizer Recipe
- Baguette bread loaf (long skinny loaf)
- 6-8 roma tomatoes
- Fresh basil (8-10 leaves or to your liking)
- Crumbled feta cheese
- salt, pepper
- Garlic Powder or Garlic Salt
- Olive Oil
Directions: Preheat oven to 375. Wash Basil and set aside on a paper towel to dry, if in a hurry blot dry. Slice bread into 1/2 inch slices and arrange on foil lined baking sheet. Drizzle with olive oil and sprinkle salt, pepper and garlic powder over bread. Bake bread for 5-7 minutes, until slightly crispy but not browned. Remove from oven and set aside.
While bread is baking slice tomatoes in half and scoop out seeds (juice and seeds will make your Bruschetta really juicy and we do not want that for this recipe). Dice tomatoes in nice squares and add to a bowl. Dice basil and add to tomatoes, mix to combine. Add feta cheese and mix ingredients together until well combined.
Arrange bread slices on a serving dish and top each piece with Bruschetta mixture.
