I love any form of a sandwich anytime of day! We used to eat at Corner Bakery for Breakfast a lot because they were right across the street.
Recently I made this sandwich that reminds me of their Ham and Swiss Panini and it is one of my favorite things to make in the morning now.
Every now and then I get in a breakfast rut. In fact I am just now coming off of one. I was making eggs to much and was getting tired of them. Before that I was making different kinds of breakfast toast to much and burned myself out on that.
Now my new kick is sandwiches. They are super quick and easy and I also make Eric some for work. We freeze them and load up the freezer so we can just grab one when we make his lunch the night before.
This particular recipe is good to eat right then though, I would not recommend freezing.
You want to bite into that perfectly toasted buttery grain bread with browned ham and melted swiss topped with an over easy egg ( i like mine to be on the soft boiled side not super oozey).
I just made myself Hungry!
The bread I use for this recipe is a Multigrain I found at Sprouts. The loaf size is small but worth it. They are wide loaves so I usually cut the piece of bread in half because it makes to big of a sandwich if I use 2 whole pieces.
See picture below it is not a good one, but I will update and take a picture of the next loaf I get for reference. You can always just use your favorite bread too.
I can make this sandwich in about 10 minutes and clean up is just one skillet and the butter knife 😉
Makes: 1 sandwich easy to double for 2
- 1 piece of Whole Grain Bread (we get ours from Sprouts)
- Butter (enough to spread on your bread no real measurement here)
- 1 Egg
- 2 slices of Fresh Sliced Deli Ham (will work with ham you have on hand we just prefer deli ham)
- 1 slice of cheese ( I like Swiss for this recipe but my husband does not so he usually gets whatever else I have Yellow American, Pepper Jack, just depends on what is in the fridge)
- Salt and Pepper to taste
Heat a large skillet to medium high heat. While skillet is warming butter your bread. Once skillet is hot add the bread butter side down.
Break egg onto other side of skillet if it starts to run away just let it cook cook a second and flip the white part over where you want it, I manipulate my egg whites that run away all the time.
Don’t freak out if it touches the bread we’re putting it all together anyways. Flip egg or cook to your liking, over easy, sunny side up, fried – your choice. I like to flip mine when the yolk starts to set and then let it cook until yolk resembles soft boiled.
Once bread is nice and toasted remove from skillet and cut in half. Put slice of cheese on one side of bread then top with the egg and salt and pepper to taste. Throw Ham on skillet just for a few seconds to brown and warm then add on top of egg. Add other half of bread for top of sandwich.
