This corn dip is not only super easy to make but it is very budget friendly. You can make this dip for under $10 and I am betting you have most of the ingredients already on hand.
Pair it with your favorite dipping chip ( we like the scoops and I buy Aldi brand for .85) and you’ve got a crowd pleasing appetizer on your hands! The best part, you tailor the heat of this dip to your liking.
Like a little spice, add extra cayenne and white pepper, even spicier add fresh jalapeno!! Not a fan of spicy, my mother in law made it with the Mexican Corn and no spices and it was still a huge hit and packed with flavor.
This dip started with my mom and Thanksgiving a few years ago. She brought it as an appetizer and it was SO GOOD. I kept requesting for her to bring it to our get togethers after that and finally had to ask for the recipe so I could make it myself.
I brought it to my in-laws on the 4th of July and had to share the recipe with 3 people there, it was that popular. Another wonderful thing about this recipe, anyone can make it. Just put everything in a bowl and MIX plus a little chopping and boom done!
Be ready to share the recipe with your friends once you bring it to the BBQ. I am not the creator of this recipe and it came from my moms friend from work which I think got it from another friend.
She brought it to a work party and everyone asked for the recipe. I refer to it as “That Corn Dip” because after your friends try it they will ask “Can I get the recipe for That Corn Dip” or “Can you bring That Corn Dip”. With Football season approaching this will definitely be on Sunday rotation. Enjoy!
Corn Dip Recipe
Not only is this corn dip a crowd pleaser but it is super easy to whip up in a jiffy. Perfect for any BBQ, family reunion, or football watching party this corn dip recipe will not disappoint.
- 3 Cans of corn Drained can use Mexican Corn
- 2 cups sour cream we always use light sour cream and it taste just fine
- 1 cup mayonnaise we like to use the avocado oil mayo
- 4 cups of shredded cheddar cheese
- Fresh bunch of chopped Green Onions
- Fresh bunch of chopped cilantro
- All spices are to taste like spicy add more of everything
- Cayenne Pepper
- White Pepper
Add all ingredients to a large bowl and mix together until well combined.
Refrigerate for one hour or overnight.
This recipe can easily be cut in half or even doubled for a very large crowd.
